I just installed VirtualBox so I can do Windows development "work" without booting into Windows. As a matter of fact, I completely got rid of my Windows install, which I only used for a few things anyhow. Anyway, I don't know if VMWare Server can even do this, but with the "guest additions" installed in VirtualBox, I can full-screen my Windows install and use it seamlessly along with my normal Ubuntu desktop.
Unlike most VM software, there is no "capture" mode where the guest OS steals the mouse and cursor. I just put my mouse in the guest's zone and VirtualBox takes care of it. Flippin' sweet!
So, you could theoretically open a bunch of VMs on different combinations of real monitors and Linux viewports, running multiple OSs at once, full-screened.
